About Us

Welcome to Chi-Pie, where culinary delights meet Simpsonville, KY. We have been serving the greater area since 2025. Specializing in a unique fusion of flavors, our bar offers a cozy ambiance where you can enjoy handcrafted cocktails alongside our signature pizzas and delectable pasta dishes. Our Story

When I moved to Chicago in 1999, I was chasing life—something new and exciting. One
of my first memories? A trip to the grocery store. I was so overwhelmed and intimidated,
that I had groceries delivered for months. Small-town boy meets big city.

But like so many others, I fell in love with Chicago, its quirky neighborhoods, each one
feeling like its own small town, full of pride, character and…characters. I landed in
Bucktown, in a corner pizza shop, living and breathing pizza for the next two decades.

My Pi was one of Chicago’s most beloved spots for deep dish and tavern-style pizza
since the early ’70s. While there, I was lucky to work with Chef Rich. Rich was an
award-winning chef who had left fine dining to return to his roots in the family pizza
business. From him, I learned not just how to make great pizza, but why it matters. My Pi
wasn’t just deep dish or thin crust—it was pride, passion, and tradition.

Chicago-style pizza has always been more than one thing. There’s deep dish, created in
the 1940s (often credited to Pizzeria Uno) where the crust rises tall like the city skyline,
loaded with layers of cheese, toppings, and chunky tomato sauce. Then there’s tavernstyle, the real hometown favorite: a thin, crisp, square-cut pie born in South Side bars,
made to be shared with a cold beer and good company. Both styles are rooted in the same
Chicago spirit—unpretentious, bold, and built to satisfy.

Chi-Pie is my way of sharing that legacy with you. So whether it’s your first time trying
deep dish or you grew up eating tavern-style on the South Side, I hope you enjoy a slice
of what Chicago means to me.

This was easily the best deep-dish Chicago-style pizza I’ve ever had and I was just in Chicago a few months ago and enjoyed pizza from three different iconic pizza establishments. The crust was buttery and crisp on the outside, soft on the inside. The delicious tomato sauce was made from scratch and I’d buy a jar if it were for sale. Every bite felt indulgent without being overwhelming. The atmosphere was relaxed and the service was excellent from Addison. If you’re looking for a Chicago-style deep dish experience, this place absolutely delivers. If we lived within an hour of this place, we would be eating this every week! Don’t wait! Check it out ASAP!

Today I went with some coworkers to Chi-Pie Chicago-Style Pizzas in Simpsonville. We had a Chicago style deep dish and a tavern style Chi-Pie Special. First of all the pizza was delicious. You could smell the aroma in the air just walking through the parking lot and it held up to the expectations once we took a bite. I'm not exaggerating when I say it's the best pizza you'll get locally. In true Chicago style the cheese is under the sauce on the deep dish pictured. The sauce was sweet and the flavor was just tremendous. Would definitely order again. The tavern style pizza was my favorite but mainly because I like all the toppings. The server was also friendly and informative. Quick service with a smile. This place should be jumping with business every day. They even have a full bar! Go check them out!
